Microwaved Stuffed Acorn Squash
If you need a quick meal to fix and you have a bountiful harvest of acorn squash here’s a meal you can fix in less than 20 minutes. Wash and cut acorn squash in half. Take all the seeds out and dry for next year’s garden. Arrange squash on a microwave dish. Place bacon slices, cut in half, around the edges of the dish. Add a pat of butter to center of each squash. Cut up asparagus tips about an inch in length and fill squashes. Cook in microwave on high for 10 minutes. Carefully crumble bacon on top of asparagus. Add a slice of cheese on top of each and cook for an additional 3-5 minutes. Add spices such as garlic pepper, salt, etc. Serves 4.

4 slices of cheese
4 Asparagus tips about 6-8 inches long
